WHAT IS PASTEURIZATION AND WHY IS IT IMPORTANT?
Pasteurization is a process in which eggs are heat-treated at a controlled temperature, high enough to destroy pathogenic bacteria, but low enough to preserve the natural properties of the egg. The process takes place in closed, hygienically controlled conditions and does not include any additives or preservatives. The result is a safe, long-lasting and practical product, ideal for restaurants, bakeries, the food industry, but also home kitchens that require functionality.
